Here is a trick to make pancakes without spending hours standing at the stove. Simply make your favorite pancake batter and then bake it up. Cut in to squares or use cookie cutters to make fun shapes for the kids. Do you have family coming in to town for the holidays? I do! I have my sister and her husband, my aunt and my step-daughter all arriving on the same day. Our head count for the holidays is 11 people! That's 11 people that need to be fed three times a day for about a week. So I really, really need to be organized and use every short cut I can think of to not be a slave to the kitchen. My first rule of cooking for large masses: use paper everything. Throw it out, don't wash it! My second rule is to cook with as minimal effort as possible. I want to enjoy my holidays not spend them cooking and cleaning. Making breakfast can particularly be a pain for large groups, but if you plan right, you can be in and out in no time. Frittatas and mini-quiche work really well for egg dishes for a lot of people. I also love a french toast casserole that can be prepped the night before and baked in the morning. I picked up this little trick of baking pancakes a few years ago. I tried it out for a New Year's Day brunch we hosted for friends and it worked perfectly. I used a pancake mix from my sister and poured it in to a greased jelly roll pan. Then I baked it at 375 degrees for about 12 minutes. I used a pizza cutter to cut the pancakes, but cookie cutters would be fun especially for the kids. A side of maple or buttermilk syrup would round out these easy and fun baked pancakes. I'm thinking baked Red Velvet Pancakes would be perfect for Christmas!
